French toast with warm mandarin salad

Servings: 4 | Preparation: 15 minutes | Cooking time: 10 minutes

Ingredients

  • 3 eggs
  • 180 ml (3/4 cup) milk
  • 30 ml (2 tbsp) brown sugar
  • 4 thick slices of cranberry orange bread
  • 30 ml (2 tbsp) butter
  • 4 mandarin oranges
  • 80 ml (1/3 cup) maple syrup
  • 2 or 3 drops vanilla extract (optional)
  • 15 ml (1 tbsp) lemon zest (optional)

Preparation

  1. In a bowl, whisk together eggs, milk, brown sugar and, if desired, vanilla. Dip bread into this mixture and let soak 2 or 3 minutes. Remove bread from bowl and let drain.
  2. In a pan, heat butter over medium-low heat. Cook bread slices 4 to 6 minutes, turning them over from time to time.
  3. During this time, separate mandarin oranges into segments. In a saucepan, bring maple syrup and, if desired, lemon zest to a boil. Add mandarin segments and cook 2 minutes over medium heat.
  4. Pour maple/mandarin sauce over French toast and serve.
